Devilled Eggs
and Variations


Devilled Eggs: What exactly are 'Devilled Eggs'? They are an appetiser or hor d'oeuvres that is well enjoyed by all. A simplistic side dish made of hard boiled eggs that have been stuffed with a range of ingredients added to the yoke. Here are several recipes.



Sweet Relish Devilled Eggs
Ingredients
:
6 hard-boiled eggs
2 Tbs sweet pickled relish
3 Tbs mayonnaise
1/2 tsp mustard
1 tsp paprika

Instructions:
Peel eggs and cut lengthways
Remove yoke and mash with a fork
Add relish and mustard and mayonnaise to the yokes
Mash this mixture until smooth and can be piped
Use a piping bag to swirl mixture into hollowed eggs
Sprinkle lightly with paprika

Ham Devilled Eggs
Ingredients
:
8 hard-boiled eggs
450g cooked ham, minced
8 Tbs grated cheese
8 Tbs sour cream
2 Tbs mustard
2 tsp chives
6 Tbs bread crumbs
50g butter, melted

Instructions:
Peel eggs and cut lengthways
Remove yoke and mash with a fork
Add all ingredients except bread crumbs and butter
Use a piping bag to swirl mixture into hollowed eggs
Sprinkle over the bread crumbs and drizzle butter
Place under a preheated grill for roughly 3 minutes
or until crispy and golden brown

Vinaigrette Devilled Eggs
Ingredients
:
8 hard-boiled eggs
1 tsp aioli mustard
1 1/2 tsp olive oil
1 tsp salad vinegar
1 tsp smoked paprika

Instructions:
Peel eggs and cut lengthways
Remove yoke and mash with a fork
Add mustard, oil and vinegar to the yokes
Mash this mixture until smooth and can be piped
Use a piping bag to swirl mixture into hollowed eggs
Sprinkle lightly with smoked paprika

Hot Devilled Eggs:
Ingredients
:
8 hard-boiled eggs
6 Tbs sour cream
1/2 garlic salt
1/2 tsp celery salt
6 drops Tabasco sauce
3 Tbs salad dressing
1 tsp paprika

Instructions:
Peel eggs and cut lengthways
Remove yoke and mash with a fork
Add sour cream, garlic salt, celery salt, Tabasco and dressing to the yokes
Mash this mixture until smooth and can be piped
Use a piping bag to swirl mixture into hollowed eggs
Sprinkle lightly with smoked paprika
